Rinse the brown rice under cold water until the water runs clear. This removes excess starch.
In a medium pot, add 1 cup of water and 1/2 cup of brown rice. Bring it to a boil, then reduce the heat to low and cover. Cook for 25-30 minutes until the rice is tender and water is absorbed.
Cut the chicken thighs into bite-sized pieces. In a bowl, mix the chicken pieces with 1/4 cup of yogurt, a tablespoon of oil, and your selected spices (garam masala, cumin, coriander, turmeric, salt, pepper) to taste. Let it marinate for 10 minutes.
Heat a skillet over medium heat. Add the marinated chicken pieces and cook until browned on all sides, about 6-8 minutes.
Add 150 g of canned tomato sauce to the skillet with the chicken. Stir well to combine and let it simmer on low heat for 10 minutes, allowing the flavors to meld together.
Check the brown rice. If cooked, fluff with a fork and set aside.
Serve the chicken tikka masala over the brown rice. Ensure both are warm.
