Baked Salmon with Asparagus

By Chef

Total: 30 minutes
Main CourseSeafood

Ingredients

  • 2 fillets salmon fillets
  • 1 bunch asparagus
  • 2 tbsp olive oil

Instructions

1

Preheat the oven to 400°F (200°C).

2

Rinse the salmon fillets under cold water and pat dry with paper towels. Place them skin-side down on a baking sheet lined with parchment paper.

3

Trim the woody ends from the asparagus and arrange the spears around the salmon fillets on the baking sheet.

4

In a small bowl, mix 2 tablespoons of olive oil, the zest of 1 lemon, and the juice of half the lemon. Season with salt and pepper to taste.

5

Drizzle the lemon and olive oil mixture over the salmon fillets and asparagus, ensuring everything is evenly coated.

6

Optionally, slice the remaining half of the lemon into thin rounds and place them on top of the salmon for added flavor.

7

Bake in the preheated oven for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork, and the asparagus is tender-crisp.

8

Remove from the oven and serve immediately, garnished with additional lemon zest if desired.
