  • 1 tsp grated ginger
  • 0.5 lime lime juice
  • 1 tsp coconut aminos
  • 1 cup bok choy or Swiss chard
  • 1 tsp sesame oil (optional)

  • to taste - pepper
  • 1 tbsp olive oil

Instructions

Preheat your oven to 400°F (200°C).

In a small bowl, combine the grated ginger, lime juice, coconut aminos, salt, and pepper.

Place the salmon fillet on a baking sheet lined with parchment paper or lightly greased.

Pour the ginger-lime mixture over the salmon, ensuring it is well-coated. Let it marinate for about 5 minutes while the oven finishes preheating.

Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, heat the olive oil in a large pan over medium heat.

Add the bok choy or Swiss chard to the pan and stir-fry for 3-4 minutes until the greens are wilted and tender. Add sesame oil, if using, and season with salt and pepper to taste.
