Preheat your oven to 400°F (200°C). Prepare a baking tray lined with parchment paper.
In a mixing bowl, combine the ground turkey, breadcrumbs, egg, Italian seasoning, minced garlic (from 2 cloves), salt, and pepper. Mix thoroughly until all the ingredients are well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking tray.
Drizzle the meatballs with olive oil to ensure they brown nicely in the oven.
Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and golden brown.
While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warm. Stir occasionally.
Once the meatballs are cooked, remove them from the oven and carefully add them to the saucepan with the marinara sauce. Stir to coat the meatballs evenly.
Slice the whole-grain rolls open and toast them lightly in an oven or on a skillet until they are crisp.
Fill each toasted roll with a portion of the meatballs and sauce. Top with shredded mozzarella.
Optionally, place the assembled subs back in the oven for a few minutes to melt the cheese, ensuring the rolls are crispy and the cheese is bubbly.
