Slice the Ciabatta or whole-wheat rolls in half horizontally.
Spread 1 tablespoon of basil pesto on the inside of each half of the rolls.
Layer the bottom half of the roll with 120g of sliced roasted turkey breast, ensuring even distribution across all three sandwiches.
Slice the fresh mozzarella cheese and evenly divide the 120g among the three sandwiches, placing it on top of the turkey slices.
Add a few slices of the large tomato on top of the mozzarella in each sandwich.
Evenly distribute the 60g of arugula across the sandwiches, placing it on top of the tomato.
Season with salt and pepper to taste before closing each sandwich with the top half of the roll.
Heat a grill pan or skillet over medium heat and lightly oil it or spray with cooking spray.
Place the sandwiches on the grill pan, pressing down gently with a spatula or another pan to flatten slightly. Grill for about 3-4 minutes on each side, or until the bread is golden and crisp, and the cheese is melted.
Remove the paninis from the pan, allow to cool slightly, then cut in half and serve warm with a side salad, if desired.
