Italian Turkey & Pesto Panini with Mozzarella and Arugula

Ingredients

  • 360 g Sliced roasted turkey breast
  • 3 pieces Ciabatta or whole-wheat rolls
  • 120 g Fresh mozzarella
  • 3 tbsp Basil pesto
  • 60 g Arugula
  • 1 large Tomato
  • as needed for grilling Olive oil or cooking spray

Instructions

Slice the ciabatta or whole-wheat rolls in half horizontally to create a top and bottom portion for each sandwich.

Spread 1 tablespoon of basil pesto on the inside of each bottom roll half.

Layer the sliced roasted turkey breast evenly across the bottom half of each roll.

Slice the tomato into thin rounds, and place a few slices over the turkey on each roll.

Divide the fresh mozzarella into equal portions and layer it on top of the tomatoes for each sandwich.

Add a generous handful of arugula on top of the mozzarella for a fresh peppery finish.

Place the top half of the rolls onto the assembled sandwiches.

Lightly brush both sides of each sandwich with olive oil or spray a grill pan with cooking spray.

Preheat a grill pan or sandwich press to medium heat.

Place the sandwiches on the grill pan or in the press, and grill for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.

Remove the panini from the heat once cooked, slice in half, and serve hot.

Season the panini with salt and pepper to taste before serving.
