Peel and finely mince the garlic clove.
Grate fresh ginger until you have 1 teaspoon ready for the stir-fry.
Heat 1 teaspoon of vegetable oil in a large non-stick frying pan or wok over medium-high heat.
Add the minced garlic and grated ginger to the pan and stir-fry for about 30 seconds until fragrant.
Increase the heat to high, add the lean beef strips, and season with a pinch of salt and pepper. Stir-fry the beef for approximately 2–3 minutes until browned and nearly cooked through.
Add the mixed stir-fry vegetables to the beef in the pan. Continue to stir-fry for about 3–4 minutes, or until the vegetables are tender-crisp.
Add the cooked udon noodles to the pan. Pour in 1 tablespoon of soy sauce and 1 teaspoon of sesame oil. Toss everything together to combine and heat through for about 2 minutes.
Remove from heat and serve hot. Adjust seasoning with more soy sauce, salt, or pepper if needed.
