Thinly slice the beef strips if not already done, and mince the garlic.
Heat the olive oil in a large pan or wok over medium-high heat.
Add the minced garlic to the hot oil and stir-fry for 30 seconds until fragrant.
Add the beef strips to the pan and stir-fry for about 2-3 minutes, until browned and mostly cooked through.
Add the mixed vegetables to the pan and continue to stir-fry for 3-4 more minutes until the vegetables are tender-crisp.
Pour the soy sauce over the beef and vegetables, stirring well to ensure everything is coated evenly.
Season with salt and pepper to taste, then serve hot.
