Ingredients

  • 100 g Rolled oats
  • 150 g Mixed vegetables (onion, tomato, carrot, peas)
  • 200 g Low-fat yogurt
  • 1 tsp Oil
  • 1 tsp Mustard seeds
  • 10 pieces Curry leaves
  • 1 piece Green chili
  • 1 inch piece Ginger
  • 2 pieces Apple or banana

Instructions

Wash and finely chop the mixed vegetables (onion, tomato, carrot, peas). Also, finely chop the green chili and ginger.

In a non-stick pan, heat 1 tsp of oil over medium heat. Add 1 tsp of mustard seeds and let them splutter.

Add 10 curry leaves, the chopped green chili, and ginger to the pan. Sauté for 30 seconds until the fragrance is released.

Add the chopped mixed vegetables to the pan. Sauté for 5-7 minutes until the vegetables are tender.

Stir in the rolled oats and add 400 ml of water. Season with salt and pepper to taste. Cook for about 5-7 minutes, stirring occasionally, until the oats are cooked and have absorbed the water.

While the oats are cooking, wash and slice the apples or bananas.

Once the oats are done, remove from heat. Serve the oats into bowls and top each serving with a spoonful of yogurt and sliced seasonal fruit.
