Ingredients

  • 1 cup rice
  • 2 medium onions
  • 1.5 cups pasta
  • 2 cups cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2.5 cups water

Instructions

Preheat the oven to 375°F (190°C).

Cook the 1 cup of rice with 2 cups of water. Bring to a boil, then simmer for about 15 minutes or until the water is absorbed, and rice is tender.

Cook the 1.5 cups pasta separately in a pot of salted boiling water for about 8-9 minutes until al dente. Drain the pasta.

Slice the 2 medium onions thinly. Heat 2 tablespoons of olive oil in a pan over medium heat and sauté the onions until they are soft and translucent, about 5-7 minutes.

In a large mixing bowl, combine the cooked rice, cooked pasta, sautéed onions, 2 cups of cheese, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix well until everything is evenly distributed.

Transfer the mixture into a greased baking dish and spread evenly.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and slightly golden on top.

Remove from the oven and let it cool for a few minutes before serving.
