Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Slice the chicken breasts into thin strips. Season with salt and pepper.
Add the chicken strips to the skillet and cook for 6-8 minutes, or until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add the remaining olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Reduce the heat to low and add the heavy cream to the garlic. Stir to combine and let simmer for 2-3 minutes.
Add the drained pasta and cooked chicken back into the skillet with the sauce. Toss to coat everything evenly.
Sprinkle the grated Parmesan cheese over the pasta and mix until melted and creamy.
Serve the garlic chicken alfredo pasta warm, garnished with extra cheese if desired.
