Succulent pan-seared chicken pieces coated in a silky garlic-Parmesan Alfredo sauce (with an easy tomato-basil marinara alternative), served on fragrant herb rice or tucked into warm flour tortillas. Rich, balanced, and layered with bright garlic and fresh herbs, this dish feels restaurant-polished yet is fully achievable at home.
Prep the chicken: Pat the chicken breasts dry and cut into 1"–1½" pieces (bite-sized or strips). Drying ensures a clean sear; smaller pieces cook quickly and pick up more sauce per bite. Season the pieces evenly with 1 tsp kosher salt and 1/2 tsp black pepper.
Dredge lightly: Place the 1/2 cup flour in a shallow bowl, season with a pinch of salt and 1/4 tsp pepper, and toss the chicken pieces quickly to coat. A light flour dusting helps the exterior brown, gives a little extra body to the sauce when bits deglaze, and creates a pleasing contrast between crisp exterior and tender interior.
Cook the rice: Rinse the rice until the water runs clear (this removes surface starch so grains remain separate). Combine the rinsed rice with 3 cups water (or 3 cups low-sodium chicken stock for more flavor), 1 tbsp butter, and 1 tsp kosher salt in a medium saucepan. Bring to a boil, then reduce to low, cover, and simmer 15–18 minutes until liquid is absorbed and grains are tender. Rest, covered, 10 minutes — resting lets steam finish the cooking and separates the grains.
Sear the chicken: Heat a large heavy-bottom skillet (cast-iron or stainless steel) over medium-high. Add 2 tbsp olive oil; when the oil shimmers (not smoking), add the chicken in a single layer without crowding — work in batches if needed. Sear 2–3 minutes per side until golden brown. Searing on high heat creates Maillard browning, building deep savory flavors; don't move the pieces too early or you'll prevent a proper crust.
After searing, transfer chicken to a plate. Reduce heat to medium, add 1 tbsp butter to the pan and the minced garlic; cook 30–45 seconds until fragrant (blooming the garlic releases its aromatic oils). Avoid long cooking of garlic on high heat — it burns and turns bitter.
Deglaze: Pour in 1/2 cup chicken stock and use a wooden spoon to scrape up brown bits from the pan. Those browned bits (fond) are concentrated flavor — deglazing dissolves them into the sauce base.
Make the Alfredo (if using): Reduce heat to medium-low. Add 3 tbsp butter and 1 1/2 cups heavy cream and gently bring to a bare simmer (tiny bubbles at the edge). Simmer 3–4 minutes to slightly reduce and thicken; simmering concentrates flavors but keep the heat low so the cream doesn’t split. Turn off the heat and whisk in the grated Parmesan in two additions, stirring until melted and smooth. If sauce seems too thick, add up to 2–3 tbsp reserved hot stock or pasta water-equivalent to reach desired consistency. Season to taste with remaining 1 tsp salt, 1/2 tsp black pepper, and red pepper flakes if using. Whisking cheese in off-heat prevents grainy texture and ensures a silky emulsion.
Marinara alternative (if using): In a separate saucepan, heat 1 tbsp olive oil over medium, add the chopped onion and a pinch of salt and sweat until translucent (3–4 minutes) to sweeten the onion. Add 3 minced garlic cloves (reserve 3 for the chicken sauce if making both), cook 30 seconds, then stir in 1 tbsp tomato paste and cook 60 seconds to caramelize and deepen tomato flavor. Add the 28 oz crushed tomatoes, 1 tsp sugar, 1 tsp dried oregano, and 2 tbsp chopped basil. Simmer gently 12–15 minutes to meld flavors. Taste and adjust salt/pepper. This approach builds layers (onion->garlic->tomato paste) so the marinara has depth without long simmering.
Finish the chicken: Return the seared chicken and any accumulated juices to the skillet with the Alfredo sauce. Warm over low heat for 2–3 minutes to bring chicken to safe internal temperature (165°F / 74°C) and let the meat absorb sauce flavors. Finishing in the sauce keeps the exterior from getting soggy while marrying flavors.
Finish rice and assemble: Fluff the rested rice with a fork and stir in 2 tbsp chopped parsley and a pinch of salt. Spoon rice onto warm plates, top with chicken and generous spoonfuls of Alfredo (or ladle marinara over chicken if using that option). Dot with the remaining parsley and a light grating of extra Parmesan if desired. If making wraps: warm tortillas in a dry skillet or oven, place a scoop of rice, chicken, and sauce, add fresh basil, fold and serve immediately. Warm tortillas prevent cracking and make wrapping easier.
