This Italian‑American weeknight favorite feels restaurant‑polished thanks to a quick pan‑sear and a tempered egg yolk finish that adds glossy body without scrambling. Bring a large pot of water to a rolling boil and add 1 tablespoon kosher salt. Salted water seasons the pasta from the inside-out.
