Ingredients

  • 2 pieces chicken breast
  • 2 cups broccoli florets
  • 1 medium red bell pepper
  • 1 medium carrot
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine or rice noodles
  • to taste n/a salt
  • to taste n/a black pepper
  • for garnish n/a parsley

Instructions

Cut the chicken breast into bite-sized pieces. Season with a pinch of salt and black pepper.

Slice the red bell pepper and carrot into thin strips. Mince the garlic cloves.

In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.

In the same skillet, add garlic and sauté for about 1 minute until fragrant. Add sliced bell pepper, carrot, and broccoli florets. Stir-fry for 5-7 minutes until vegetables are just tender.

Meanwhile, cook the fettuccine or rice noodles according to package instructions. Drain and set aside.

Return the cooked chicken to the skillet. Add soy sauce and stir to combine.

Reduce the heat to low and pour in the heavy cream. Add the grated Parmesan cheese and stir continuously until the sauce thickens slightly, about 2-3 minutes.

Add the cooked noodles to the skillet and toss everything together until well combined and heated through.

Serve hot, garnished with fresh parsley if desired.
