Main CourseSeafoodHealthyQuick & Easy

Ingredients

  • 2 pieces salmon fillets
  • 2 cups asparagus
  • 1 whole lemon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

1

Preheat your oven to 400°F (200°C).

2

Wash the asparagus and trim the woody ends. Arrange the asparagus on a baking sheet lined with parchment paper or lightly greased with olive oil.

3

Place the salmon fillets skin-side down on the baking sheet next to the asparagus.

4

Drizzle the olive oil over the salmon fillets and asparagus, ensuring they are evenly coated.

5

Sprinkle the salt and black pepper evenly over both the salmon and asparagus.

6

Cut the lemon in half. Squeeze the juice of one half over the salmon and asparagus. Slice the other half into thin slices and place them on top of the salmon fillets.

7

Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

8

Remove from the oven and serve immediately. Optionally, garnish with additional lemon wedges or fresh herbs of your choice.
