Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt, black pepper, chili powder, cumin, garlic powder, and onion powder.
Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side or until cooked through and lightly browned. Remove from heat and let it cool slightly.
Shred the cooked chicken using two forks and set it aside.
In a baking dish, spread a thin layer of enchilada sauce on the bottom.
Spoon about 2 tablespoons of shredded chicken onto each corn tortilla, then roll it up tightly.
Place the rolled tortillas seam-side down in the baking dish.
Pour the remaining enchilada sauce over the top of the tortillas, ensuring they are fully covered.
Sprinkle shredded cheddar and mozzarella cheese evenly over the enchiladas.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Garnish the enchiladas with chopped cilantro and serve with sour cream on the side.
