Preheat the oven to 180°C (350°F).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large pan over medium heat, add 1 tablespoon of oil and cook the diced chicken breast until golden and cooked through. Set aside.
In the same pan, add another tablespoon of oil, then add minced garlic, sliced carrots, and diced potato. Cook until the vegetables are tender, about 8 minutes.
In a saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, cook for about 1 minute.
Slowly whisk in 1 cup of water, stirring continuously until the sauce thickens. Season with salt and pepper to taste.
In a large mixing bowl, combine the cooked pasta, chicken, vegetables, and creamy sauce. Mix well.
Transfer the mixture into a baking dish. Sprinkle the grated cheese on top evenly.
Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
