Heat a non-stick skillet over medium heat and add the olive oil.
Place one tortilla in the skillet and sprinkle half of the cheese evenly over the tortilla.
Season the cheese with salt and pepper to taste.
Place the second tortilla on top of the cheese, pressing down gently with a spatula.
Cook for about 2-3 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.
Carefully flip the quesadilla using a spatula and cook the other side for another 2-3 minutes until golden brown and the cheese is fully melted.
Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges.
Serve immediately and enjoy your homemade cheese quesadilla.
