Ingredients

  • 1 slice whole-grain bread slice
  • 1/2 piece avocado
  • 1 piece poached egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili flakes

Instructions

Bring a small pot of water to a simmer. Add a splash of white vinegar if desired, to help the poached egg hold its shape.

Crack the egg into a small bowl. Stir the simmering water with a spoon to create a gentle whirlpool, and gently add the egg into the center. Cook for about 3-4 minutes, or until the whites are set but the yolk is still runny.

While the egg is poaching, toast the whole-grain bread slice in a toaster or under a broiler until golden brown.

Remove the poached egg with a slotted spoon and gently pat dry with a paper towel.

Scoop the flesh from the avocado half into a bowl. Add salt and pepper, and mash the avocado until smooth. Adjust seasoning to taste.

Spread the mashed avocado evenly over the toasted bread.

Place the poached egg on top of the avocado toast. Sprinkle with additional salt, pepper, and chili flakes to taste.
