Preheat your oven to 180°C (350°F).
Thinly slice the potatoes and onions. Mince the garlic cloves.
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sliced onions. Sauté until the onions become translucent.
Stir in the 2 tablespoons of flour and cook for 1 minute until the flour is well incorporated and slightly golden.
Slowly whisk in the 2 cups of milk, making sure there are no lumps. Continue to cook, stirring constantly, until the mixture thickens (about 5 minutes).
Remove the saucepan from heat, and add salt, pepper, and 150 grams of the cheese to the sauce. Stir until the cheese is melted and the sauce is smooth.
In a greased baking dish, arrange a layer of sliced potatoes, then a layer of the sautéed onion mixture. Repeat layers until all the potatoes and onions are used up.
Pour the cheese sauce over the layered potatoes and onions, ensuring it is evenly distributed.
Sprinkle the remaining 50 grams of cheese on top.
Cover with aluminum foil and bake in the preheated oven for 30 minutes. Uncover and bake for an additional 15 minutes, or until the top is golden and the potatoes are tender.
Allow to rest for 10 minutes before serving to set the layers.
