Bright, elegant bites that balance silky smoked salmon, creamy lemon-scented avocado, and crisp cucumber rounds. Each canapé offers contrasting textures — cool, crunchy cucumber; velvety avocado; and tender, smoky salmon — finished with briny capers and fresh dill for a restaurant-quality appetizer.
Prepare the cucumber rounds: Trim the cucumber ends and, if the skin is waxy, lightly scrub. Slice into even 1/4-inch (6 mm) rounds — uniform thickness ensures every bite is balanced and the rounds sit flat on the plate. If you have a mandoline, use it on a low setting to get perfectly even slices quickly and safely (use the guard).
Dry and season the cucumber: Lay the rounds on a paper towel-lined tray and pat the tops dry. This removes surface moisture so the avocado topping clings and the cucumbers don't become soggy. Sprinkle a very light pinch of sea salt across the rounds (a little salt enhances flavor without making them watery) and set aside while you make the avocado.
Make the lemon-dill avocado: In a small bowl, scoop the avocado flesh and mash gently with a fork — leave it slightly chunky for texture. Add the lemon zest and the 1 tsp lemon juice immediately (acid slows oxidation and keeps the avocado bright). Stir in 1 tsp olive oil, half of the chopped dill, and a pinch of salt and pepper. Taste and adjust: a touch more lemon brightens, salt amplifies the salmon's flavor.
Flake the smoked salmon: Using your fingers or a fork, gently break the smoked salmon into bite-size pieces. Avoid over-handling the salmon — tearing gently preserves its silky texture. Small pieces are easier to bite through on the cucumber rounds.
Assemble the rounds: Using a small spoon (or a piping bag fitted with a wide tip for precision), place about 1/2 teaspoon of the avocado mix onto each cucumber round. The avocado acts as an adhesive and creamy counterpoint to the crisp cucumber. Top each mound with a flake of smoked salmon, and if using, place a few capers on top for a briny pop.
Finish and dress: Drizzle the remaining 1/2 tsp olive oil very lightly over the arranged rounds (this adds sheen and mouthfeel). Sprinkle the remaining chopped dill evenly across the platter and finish with a tiny grind of black pepper. Avoid over-squeezing lemon juice on top — too much acid will make the cucumber release water.
Serve immediately for best texture: These are at their crispiest when served within 15–30 minutes of assembly. If you need to hold them longer, keep the cucumber rounds and avocado mix separate; assemble just before serving to prevent sogginess and browning.
Plating note (restaurant touch): Arrange the rounds in a gentle stagger on a long platter. Garnish with extra dill sprigs and very thin lemon curls (use a microplane or channel knife for elegance). For a refined look, place a micro-dot of crème fraîche on a few rounds before adding salmon.
