Ingredients

  • 2 pieces fish fillets
  • 4 pieces eggs
  • 2 medium carrots
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon fresh parsley
  • 1 piece lemon

Instructions

Grate the carrots and set aside.

In a bowl, beat the eggs together with a pinch of salt and pepper. Stir in the grated carrots until well combined.

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour in the carrot and egg mixture, cooking for about 5-7 minutes or until the edges start to set.

Use a spatula to gently lift the edges of the frittata, allowing uncooked eggs to flow underneath. Cook until the top is nearly set, about 3 more minutes.

While the frittata is cooking, season both sides of the fish fillets with salt, black pepper, and garlic powder.

Heat the remaining 1 tablespoon of olive oil in another pan over medium-high heat. Place the fish fillets in the pan and cook for about 3-4 minutes on each side, until golden brown and cooked through.

Remove the frittata and fish from the heat. Squeeze fresh lemon juice over the fish and sprinkle with chopped fresh parsley.

Cut the frittata into wedges and serve alongside the pan-seared fish fillets.
