Pan-seared Fish with Lemon & Herbs

Ingredients

  • 4 pieces White fish fillets
  • 1 whole Lemon
  • 1/4 cup Parsley
  • 2 tablespoons Olive oil
  • 2 cups Steamed greens
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

Pat the white fish fillets dry with paper towels. Season both sides of the fillets with salt and black pepper.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.

Add the fish fillets to the skillet, skin-side down if the fillets have skin. Cook for 3-4 minutes without moving them, until the edges are opaque and the bottom is golden brown.

Carefully flip the fillets using a spatula, add another tablespoon of olive oil if needed, and cook for another 2-3 minutes until the fish is cooked through and flakes easily with a fork.

While the fish is cooking, finely chop the parsley and zest the lemon. Cut the lemon into wedges.

Once the fillets are done, remove them from the skillet and place them on a serving platter. Sprinkle the lemon zest and chopped parsley evenly over the top of the fish.

Serve the pan-seared fish with the steamed greens and lemon wedges on the side. Drizzle with a little extra olive oil if desired.
