Preheat your oven to 200°C (390°F).
Peel and dice the sweet potato into bite-size chunks. Place them on a baking tray.
Drizzle half of the olive oil over the sweet potatoes. Sprinkle with salt and pepper. Toss to coat evenly.
Bake the sweet potatoes in the preheated oven for 15 minutes.
While the sweet potatoes are baking, prepare the salmon. Place the salmon fillet on a piece of foil on a separate baking tray.
Mince the garlic and sprinkle it over the salmon. Drizzle with the remaining olive oil, squeeze the juice from the half lemon over it, and season with salt and pepper.
Fold the foil over the salmon fillet to create a sealed package to bake in the oven. This will keep the salmon moist.
After the sweet potatoes have baked for 15 minutes, add the green beans to the tray with the sweet potatoes. Toss them gently to coat with the oil left on the tray, and return the tray to the oven.
Place the salmon package in the oven alongside the sweet potato and green bean tray. Bake everything for an additional 15-18 minutes until the salmon is cooked through and the vegetables are tender.
Carefully open the salmon package, being cautious of the hot steam. Sprinkle the chopped fresh dill or parsley over the salmon before serving.
Serve the baked salmon alongside the roasted sweet potato and green beans. Enjoy your meal!
