Preheat your oven to 200°C (390°F).
Peel the sweet potato and cut it into wedges. Place the wedges on a baking sheet, drizzle with 1/2 tablespoon of olive oil, and season with salt and pepper.
Roast the sweet potato wedges in the preheated oven for 25-30 minutes until golden brown and crispy, turning halfway through.
While the sweet potatoes are roasting, heat a grill pan over medium-high heat. Lightly oil the salmon fillet and season with salt and pepper.
Place the salmon on the heated grill pan. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.
In another pan, heat the remaining 1/2 tablespoon of olive oil over medium heat. Add the green beans and sauté for about 5 minutes until they are tender but still crisp. Season with salt and pepper.
Once everything is cooked, plate the salmon with the roasted sweet potatoes and sautéed green beans.
Garnish the dish with chopped parsley and serve with lemon wedges on the side.
