BBQ Pork Tenderloin with Roasted Sweet Potatoes & Green Beans

Ingredients

  • 1.5 lb pork tenderloin
  • 3 medium sweet potatoes
  • 12 oz green beans
  • 2 tbsp olive oil
  • 2 tbsp BBQ sauce
  • 1 tsp garlic powder

Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, a pinch of salt, pepper, and 1/2 teaspoon of garlic powder. Spread them out evenly on a baking sheet.

Roast the sweet potatoes in the preheated oven for 15 minutes.

While the sweet potatoes are roasting, trim the green beans and mix them with the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper in another bowl.

Take the sweet potatoes out of the oven after 15 minutes and move them to one side of the baking sheet. Add the green beans to the other side of the baking sheet. Roast for another 20 minutes or until both the sweet potatoes and green beans are tender.

Meanwhile, season the pork tenderloin with salt, pepper, and the remaining 1/2 teaspoon of garlic powder.

Heat a grill pan or skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.

Brush the seared pork tenderloin with BBQ sauce, then place it in the oven on a baking sheet or in an oven-safe dish. Bake it in the oven for 15-20 minutes, or until it reaches an internal temperature of 145°F (63°C).

Let the pork rest for 5 minutes before slicing. Serve the sliced pork tenderloin with the roasted sweet potatoes and green beans. Garnish with fresh parsley before serving.
