Ingredients

  • 180 g Salmon fillet
  • 200 g Sweet potato
  • 100 g Green beans
  • 1 tbsp Olive oil
  • 1/2 piece Lemon
  • 1 clove Garlic
  • 1 tsp Fresh dill or parsley
  • to taste Salt and pepper

Instructions

Preheat the oven to 200°C (400°F).

Peel the sweet potato and cut it into 1-inch cubes.

Trim the ends of the green beans and place them in a bowl.

Mince the garlic and set aside.

In a large mixing bowl, combine the sweet potato cubes and green beans. Drizzle with 1/2 tablespoon of olive oil, add the minced garlic, and season with salt and pepper. Toss until evenly coated.

Spread the sweet potatoes and green beans onto a baking tray lined with parchment paper, leaving space for the salmon.

Place the salmon fillet on the same baking tray. Drizzle the remaining 1/2 tablespoon of olive oil over the salmon. Squeeze the juice of half a lemon over the salmon and season with salt, pepper, and fresh dill or parsley.

Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the sweet potatoes are tender.

Remove from the oven and let sit for a couple of minutes before serving.

Serve the baked salmon with roasted sweet potatoes and green beans on a plate. Optionally, garnish with additional lemon slices or fresh herbs.
