Ingredients

  • 2 cups plain Greek yogurt (2%)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2/3 cup nut-free granola (oats + seeds)
  • 2 tbsp chia seeds
  • 2 tsp honey
  • 1 tsp vanilla extract

Instructions

In a medium mixing bowl, combine the Greek yogurt and vanilla extract. Stir well to incorporate the vanilla evenly throughout the yogurt.

In a small bowl, mix together the chia seeds and 1 tablespoon of water. Let this mixture sit for 5 minutes until it becomes a gel-like consistency.

Layer the parfait glasses or bowls starting with half of the Greek yogurt at the bottom.

Evenly distribute half of the nut-free granola over the yogurt layer.

Sprinkle half of the mixed berries on top of the granola layer.

Add the remaining Greek yogurt on top of the berries.

Evenly distribute the chia seed mixture over the yogurt layer. Drizzle with honey if using.

Top with the remaining granola and the rest of the mixed berries.

Serve immediately or refrigerate for up to 2 hours for a colder treat.
