Total: 15 minutes
DessertBreakfastSnackGluten-FreeNut-Free

Ingredients

  • 2 cups plain Greek yogurt (2%)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2/3 cup nut-free granola
  • 2 tbsp chia seeds
  • 2 tsp honey (optional)
  • 1 tsp vanilla extract (optional)

Instructions

1

In a medium-sized bowl, mix the plain Greek yogurt with vanilla extract and honey until smooth. This step is optional if you desire flavored yogurt.

2

In a separate small bowl, combine the mixed berries. If desired, you can slightly mash some of the berries to release their juice for a more intense flavor.

3

Choose 4 small glass cups or parfait dishes. Begin layering: Start with 1/4 cup of the Greek yogurt mixture at the bottom of each cup.

4

Sprinkle 1 tablespoon of chia seeds over the yogurt layer in each cup.

5

Add a layer of mixed berries, about 2 tablespoons per cup.

6

Add 2 tablespoons of nut-free granola to each cup for crunch.

7

Repeat the layering with another 1/4 cup of Greek yogurt in each cup, followed by remaining mixed berries and granola.

8

Optional: Drizzle a small amount of honey on top of each parfait for added sweetness.

9

Serve immediately for a crunchy texture or refrigerate for up to 2 hours to allow flavors to meld. Enjoy!
