Boil the potatoes until soft, mash them, and combine with the rest of the ingredients to form a dough.
Roll the dough into thick noodle-like shapes.
Bring a pot of water to a boil, add the potato noodles, and cook until they float. Drain and set aside.
To make the sauce, combine all the ingredients in a bowl. Pour hot oil over the mixture and stir well.
Toss the cooked potato noodles in the sauce. Garnish with sesame seeds and extra green onion.
