Preheat your oven to 350°F (175°C).
Season the chicken breasts with salt, pepper, and garlic powder on both sides.
In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until they are golden brown and fully cooked, about 7-8 minutes per side. Once done, remove them from the skillet and let them rest for a few minutes before cutting into 1-inch cubes.
While the chicken is cooking, melt the butter in another skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
In a large bowl, combine the cooked chicken cubes, frozen hash browns, cream of chicken soup, sour cream, 1 1/2 cups of cheddar cheese, cooked onions, salt, pepper, and paprika. Mix until well combined.
Transfer the mixture to a greased 9x13-inch baking dish. Spread it out evenly.
Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the casserole.
Bake in the preheated oven for 45 minutes until the top is golden and crispy.
Remove from the oven and let the casserole rest for about 5-10 minutes before serving. This will allow it to set a little and make it easier to serve.
