Preheat the oven to 350°F (175°C). Spray a 9x13-inch baking dish with cooking spray.
In a pan over medium heat, heat the olive oil. Add the chicken breast and cook until browned and cooked through, about 7-9 minutes per side. Once cooked, remove from the pan and let it rest before dicing into bite-sized pieces.
In the same pan, add butter. Once melted, add the diced onion and sauté until translucent, about 4-5 minutes.
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika.
Add the diced chicken, sautéed onions, frozen hash browns, and 1 cup of shredded cheddar cheese to the egg mixture. Mix well until combined.
Pour the mixture into the prepared baking dish, spreading it evenly. Top with the remaining 1/2 cup of shredded cheddar cheese.
Bake in the preheated oven for 45 minutes until the top is golden brown and the casserole is set.
Allow the casserole to cool slightly before cutting into squares. Serve warm.
