Preheat your oven to 180°C (350°F). Grease a 9x13 inch baking dish with a bit of butter or oil to prevent sticking.
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chicken breast (cut into bite-sized pieces) and cook until no longer pink, about 5-7 minutes. Season with salt and pepper. Remove from heat and set aside.
In a large mixing bowl, whisk together the eggs, milk, and sugar until well combined.
Gradually add in the flour, continuing to whisk to avoid lumps. Stir in 1 cup of shredded cheddar cheese into the egg mixture, reserving 1/2 cup for topping.
Gently fold in the cooked chicken pieces into the egg mixture, ensuring the chicken is evenly distributed.
Pour the egg and chicken mixture into the prepared baking dish, spreading it out evenly.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top for a cheesy crust.
Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a knife inserted into the center comes out clean.
Allow the casserole to cool for a few minutes before slicing and serving.
