Preheat your oven to 350°F (175°C).
Cook the rice according to package instructions if not already cooked, and set aside.
Dice the chicken breast into small pieces. In a skillet over medium heat, add 1 tablespoon of olive oil, and sauté the chicken until cooked through, about 7-10 minutes. Set aside.
Chop the onion and mince the garlic. In the same skillet, add 1 tablespoon of olive oil and sauté the onion and garlic until softened, about 3-4 minutes.
In a bowl, whisk the eggs with the milk, salt, and black pepper.
In a large mixing bowl, combine cooked rice, sautéed chicken, onions, garlic, and half of the cheese. Mix well.
Pour the egg mixture over the rice and chicken mixture, and stir to combine.
Transfer the mixture into a greased baking dish. Sprinkle the remaining cheese on top.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and golden brown.
Allow the casserole to cool for a few minutes before slicing and serving.
