  • 500 g chicken breast
  • 1 large onion
  • 3 medium potatoes
  • 2 cups milk
  • 1 cup rice
  • 200 g cheese
  • 3 pieces garlic cloves
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Preheat the oven to 375°F (190°C).

Cut the chicken breast into bite-sized pieces. Dice the onion and peel and thinly slice the potatoes. Mince the garlic cloves.

In a large ovenproof skillet or casserole dish, heat olive oil over medium heat. Add the chicken pieces and cook until lightly browned, about 5 minutes. Remove chicken from the skillet and set aside.

In the same skillet, add diced onions and minced garlic. Sauté until the onions become translucent, about 3 minutes.

Add 2 cups of milk to the skillet and bring to a simmer. Stir in the rice and sliced potatoes. Season with salt and pepper. Mix well to ensure the rice is evenly distributed.

Return the chicken pieces to the skillet, mixing them with the rice and potatoes. Ensure the ingredients are evenly layered.

Cover the skillet with aluminum foil or a lid. Transfer to the preheated oven and bake for 30 minutes.

Remove the foil or lid, sprinkle 200 g of cheese evenly over the top, and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Carefully remove the casserole from the oven. Let it sit for 5 minutes before serving to allow the flavors to meld together.
