Preheat your oven to 375°F (190°C).
Rinse the rice under cold water until the water runs clear. This will help remove excess starch and keep the rice from becoming sticky.
In a medium saucepan, bring 2 cups of water and a pinch of salt to a boil. Add the rice, reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is tender and all the water is absorbed.
While the rice is cooking, dice the chicken breasts into bite-sized pieces.
In a large skillet, heat the vegetable oil over medium-high heat. Add the diced chicken, seasoning with salt, black pepper, garlic powder, onion powder, and paprika. Cook until the chicken is browned and cooked through, about 8-10 minutes.
In a large mixing bowl, whisk together the eggs and milk until well combined.
Add the cooked rice, chicken, and half of the cheddar cheese to the egg mixture. Stir until everything is well mixed.
Pour the mixture into a greased baking dish, spreading it out evenly.
Sprinkle the remaining cheddar cheese over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy.
Remove the casserole from the oven and let it rest for a few minutes before serving. Enjoy your cheesy chicken rice casserole!
