Grate the cheese gently and set aside.
In a medium saucepan, combine the milk, sugar, and salt. Stir the mixture over medium heat until the sugar is completely dissolved.
Once the sugar is dissolved, add the grated cheese to the milk mixture while stirring continuously until the cheese is melted and well integrated.
Mix the cornstarch with 2 tablespoons of water to create a slurry. Add this to the saucepan, stirring constantly until the mixture starts to thicken.
Remove the saucepan from the heat and stir in the vanilla extract. Mix well to combine.
Pour the pudding mixture into serving bowls or ramekins. Allow it to cool at room temperature for 10-15 minutes before transferring to the refrigerator.
Chill the pudding in the refrigerator for at least 30 minutes until it is set.
Serve chilled, garnished with a sprinkling of grated cheese or a drizzle of honey, if desired.
