Instructions

In a medium-sized bowl, whisk together the chia seeds, unsweetened almond milk, and a pinch of salt. If desired, add sweetener to taste and vanilla extract for extra flavor.

Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or ideally overnight, until the chia seeds have absorbed the liquid and the mixture has thickened to a pudding-like consistency.

Before serving, gently stir the pudding. If it seems too thick, add a little more almond milk to reach your desired consistency.
