  • 2 cups Coconut milk
  • 1 cup Mango
  • 0.25 cup Toasted almonds
  • 1 tbsp Honey

Instructions

In a medium-sized mixing bowl, combine 6 tablespoons of chia seeds with 2 cups of coconut milk. Stir well to ensure the chia seeds are evenly distributed and not clumped together.

Add 1 tablespoon of honey to the chia mixture. Stir thoroughly until the honey is well blended into the milk and chia seeds.

Cover the bowl with plastic wrap or a lid, and refrigerate for at least 2 hours, or until the mixture thickens to a pudding-like consistency. It's best if left overnight.

Once the chia pudding has set, stir it gently to break up any clumps. Divide the pudding into serving bowls or glasses.

Top each serving with diced mango, ensuring approximately 1/4 cup of mango per serving. Sprinkle toasted almonds over the top for added crunch.
