Ingredients

  • 120 g salmon fillet
  • 3/4 cup cooked brown rice
  • 1 cup steamed broccoli
  • 1/2 cup shredded carrots
  • 1.5 tbsp low-sodium teriyaki sauce
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Place the salmon fillet on the prepared baking sheet. Season with salt and pepper. Brush the teriyaki sauce evenly over the top of the salmon fillet.

Bake the salmon in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, heat the sesame oil in a skillet over medium heat. Add the shredded carrots and cook for 2-3 minutes, stirring occasionally, until they are slightly softened.

In a serving bowl, arrange the cooked brown rice, steamed broccoli, and sautéed carrots.

Once the salmon is done, remove it from the oven and allow it to rest for a minute. Then, flake the salmon into large pieces.

Add the flaked salmon to the bowl with the rice and vegetables.

Sprinkle sesame seeds over the top of the bowl. Serve immediately.
