Slice the multigrain bread if not already sliced. You will need 4 slices per person, making a total of 12 slices.
If using cheese, place one slice of cheese on six slices of bread.
Divide the sliced turkey breast evenly among the cheese-topped bread slices. You will use approximately 2 oz per sandwich.
Mash or slice the 1.5 avocados and evenly distribute over the turkey on each sandwich. Season with a little salt and pepper if desired.
Place a leaf of lettuce and a slice of tomato on top of the avocado on each sandwich.
Spread mustard or light mayo on the remaining slices of bread to taste, then place them on top of each sandwich to close.
Cut each sandwich in half for easy handling if desired.
Serve each sandwich with carrot sticks on the side. Arrange the 6 medium carrot sticks equally on three plates, which equates to about two carrots per serving.
