Ingredients

  • 6 slices Whole-grain bread or ciabatta
  • 360 g Cooked rotisserie or grilled chicken
  • 6 tbsp Basil pesto
  • 90 g Fresh mozzarella
  • 2 medium Tomato
  • 60 g Arugula
  • 1 tbsp Olive oil

Instructions

Preheat a grill pan or skillet over medium heat.

Slice the tomatoes into thin rounds. Divide the fresh mozzarella into 6 equal slices.

Slice the cooked rotisserie or grilled chicken into thin pieces.

Spread 1 tablespoon of basil pesto on one side of each slice of bread. If using ciabatta rolls, slice them open and spread the pesto on the cut sides.

On three slices of bread (or the bottom halves of ciabatta), layer the chicken slices evenly.

Add slices of tomato over the chicken, then top with mozzarella slices.

Layer the arugula evenly over the mozzarella. Close the sandwiches with the remaining bread slices or ciabatta tops, pesto side down.

Brush the outside of each sandwich lightly with olive oil or melt butter in the grill pan and dip the outside of each sandwich briefly to coat.

Place the sandwiches in the heated grill pan. Press down gently with a spatula or use a panini press if available.

Grill each side for about 3-4 minutes, until the bread is golden brown and crispy, and the cheese is melted.

Remove the panini from the heat, let them cool slightly, then slice and serve warm.
