Grilled Chicken Pesto Panini with Tomato Soup

Ingredients

  • 200 g Grilled chicken slices
  • 2 rolls Ciabatta or whole-grain bread
  • 4 tbsp Basil pesto
  • 1 medium Sliced tomato
  • 100 g Mozzarella
  • 2 cups Canned or homemade tomato soup
  • 2 tbsp Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Preheat a panini press or a large skillet over medium heat.

Slice the Ciabatta or whole-grain rolls in half horizontally.

Spread 1 tablespoon of basil pesto on the cut side of each half of the bread.

Layer the bottom half of the bread with grilled chicken slices equally divided across the two sandwiches.

Add slices of tomato on top of the chicken, then layer with sliced mozzarella.

Season with a pinch of salt and black pepper to taste.

Cover with the top half of the bread, pressing down gently.

Brush the outside of the sandwich with olive oil.

Place the sandwiches on the panini press or skillet. Press down and grill for about 5-7 minutes, or until the bread is crispy and the cheese is melted. Turn halfway through if using a skillet.

While the panini is grilling, heat the tomato soup in a small saucepan over medium heat, stirring occasionally until warmed through.

Cut the panini in half if desired and serve immediately with a side of hot tomato soup.
