Preheat a grill pan over medium heat. Slice the tomatoes thinly and set aside. Slice fresh mozzarella into thin rounds.
Spread 1 tablespoon of basil pesto on each slice of bread or each half of the ciabatta rolls.
Divide the cooked chicken evenly and layer it on half of the bread slices. Season with a pinch of salt and pepper.
Add slices of fresh mozzarella on top of the chicken layer, followed by a layer of sliced tomatoes.
Add a small handful of arugula on top of the tomatoes, and then top with the second slice of bread or the other half of the roll.
Lightly brush the outside of each sandwich with olive oil or spread a thin layer of butter.
Grill the sandwiches on the preheated grill pan, pressing down lightly with a spatula or a heavy pan. Grill for 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.
Remove from the grill and let them rest for a minute. Cut in half if desired, and serve warm.
