Preheat your oven to 200°C (400°F).
Peel and slice the onion into thin rings. Peel the potatoes and cut them into 1/4-inch thick slices.
Mince the garlic cloves and set aside.
In a large mixing bowl, combine the sliced potatoes, onions, minced garlic, olive oil, salt, pepper, and rosemary. Toss until the vegetables are well coated with the oil and seasonings.
Place the chicken breasts in a baking dish. Season them with a pinch of salt and pepper.
Arrange the coated onion and potato mixture around the chicken in the baking dish.
Pour the chicken broth over the mixture, ensuring that it spreads evenly at the bottom of the baking dish.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for another 10-15 minutes, or until the potatoes are tender and the chicken is cooked through. The chicken should reach an internal temperature of 75°C (165°F).
Remove from the oven and let it rest for a few minutes before serving. Serve warm, garnished with fresh rosemary if desired.
