Preheat your oven to 400°F (200°C).
Peel and slice the potatoes into thin, even slices. Place them in a bowl of cold water to prevent browning.
Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, garlic powder, and onion powder.
Heat olive oil in a large pan over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove from heat.
Drain the sliced potatoes and pat dry with a towel. Layer half of the potatoes evenly in a greased baking dish.
In a separate bowl, mix together the milk and 1 cup of the cheddar cheese.
Spread the cooked chicken evenly over the potatoes in the baking dish. Pour the cheese mixture over the chicken and potatoes.
Layer the remaining potatoes on top. Sprinkle with the remaining 1/2 cup of cheddar cheese.
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is golden and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Enjoy your cheesy chicken and potato bake!
