Preheat your oven to 200°C (392°F).
Wash and peel the potatoes, then slice them thinly. Arrange the slices in the bottom of a baking dish.
Drizzle 1 tablespoon of olive oil over the potato slices and sprinkle with a pinch of salt and black pepper. Bake in the oven for 10 minutes.
While the potatoes are baking, cut the chicken breasts into bite-sized pieces. Season with salt, pepper, oregano, and garlic powder.
Heat 1 tablespoon of olive oil in a large pan on medium-high heat. Add the chicken pieces and cook until golden brown, about 5-7 minutes.
Grate the cheddar cheese and set aside. Slice the tomatoes thinly.
Remove the potatoes from the oven, layer the chicken pieces evenly over the potatoes, and place tomato slices on top of the chicken.
Sprinkle the grated cheddar cheese on top.
Cut the butter into small pieces and scatter over the top of the cheese.
Bake in the oven for another 30 minutes, or until the cheese is bubbly and golden.
Meanwhile, cook the rice according to the package instructions.
Serve the cheesy chicken and potato bake hot with a side of rice.
