Ingredients

  • 8 oz Soba noodles (buckwheat)
  • 2 cups Cooked chicken breast, shredded or sliced
  • 1 cup Cucumber, julienned
  • 1 cup Carrot, julienned
  • 1/2 cup Green onion, thinly sliced
  • 2 tbsp Sesame oil
  • 3 tbsp Soy sauce (or tamari)
  • 2 tbsp Rice vinegar
  • 1 tbsp Honey
  • 2 tbsp Toasted sesame seeds

Instructions

Cook the soba noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

In a large mixing bowl, whisk together the sesame oil, soy sauce (or tamari), rice vinegar, and honey to create the dressing.

Add the cooked soba noodles, shredded or sliced chicken breast, julienned cucumber, julienned carrot, and thinly sliced green onions to the mixing bowl with the dressing.

Toss all the ingredients together until well combined and the dressing coats all the components evenly.

Sprinkle the toasted sesame seeds over the top of the salad. Toss gently once more.

Serve the salad immediately or refrigerate it for up to 2 hours to let the flavors meld. Serve chilled.
