Ingredients

  • 200 g Soba noodles
  • 200 g Shelled edamame
  • 1 medium Cucumber
  • 1 medium Carrot
  • 3 stalks Scallion
  • 2 tbsp Sesame oil
  • 3 tbsp Low-sodium soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Sesame seeds
  • to taste N/A Salt
  • to taste N/A Black pepper

Instructions

Cook the soba noodles according to the package instructions. Drain and rinse under cold water, then set aside.

In a small pot, bring water to a boil and add the shelled edamame. Cook for about 3-4 minutes until tender. Drain and set aside.

Peel the carrot and cut it into thin matchsticks. Thinly slice the cucumber into half-moons. Slice the scallions finely.

In a large mixing bowl, combine the cooked soba noodles, edamame, carrot, cucumber, and scallions.

In a small bowl, whisk together the sesame oil, low-sodium soy sauce, rice vinegar, sesame seeds, salt, and black pepper to make the dressing.

Pour the dressing over the noodle and vegetable mixture. Toss well to combine and ensure everything is evenly coated.

Taste and adjust the seasoning if necessary. Serve chilled or at room temperature.
