Ingredients

  • 200 g Soba noodles
  • 200 g Shelled edamame
  • 1 large, julienned Carrot
  • 0.5 julienned Cucumber
  • 1 tbsp Sesame oil
  • 1 tbsp Rice vinegar
  • 1 tbsp Soy sauce
  • 1 tsp, grated Fresh ginger
  • 1 tbsp Toasted sesame seeds
  • 1 tsp Salt
  • 0.25 tsp Black pepper

Instructions

Cook the Soba noodles according to the package instructions. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and to cool them down. Set aside to drain.

While the noodles are cooking, bring a pot of water to boil. Add a pinch of salt and the shelled edamame. Cook for about 3-4 minutes or until tender. Drain and rinse under cold water to cool them.

In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and grated fresh ginger to make the dressing. Season with salt and black pepper to taste.

In a large bowl, combine the cooled soba noodles, edamame, julienned carrot, and cucumber. Stir in the dressing and toss gently to combine everything evenly.

Transfer the soba salad to a serving platter or individual plates. Sprinkle with toasted sesame seeds before serving.
